Cheesy Broccoli Soup

As the gorgeous fall we’ve been having begins giving in to the onslaught of Winter we turn to warming soups to beat the cold back just a bit longer. This cheesy broccoli soup’s a good-un, superstar team of  broccoli and cheese are joined by hipster and veg-friendly quinoa for some added heartiness. Meanwhile, upstart nutritional yeast brings a bunch of cheesy flavor so you can use less of your precious cheese. What I’m saying here is this soup will warm you up and make you feel like you’re eating healthy. Is it actually healthy? I have no idea! I’m just a comedy wife, but things like quinoa, broccoli, and nutritional yeast are good for you. So why not? If there’s one thing comedy wives do know about though, it’s cheese.

What the heck is nutritional yeast anyway and why should I buy this thing I never buy, you ask? Nutritional yeast is awesome! You should get into it! It’s deactivated yeast that comes in orange-coloured flakes and tastes vaguely like cheese. Vegans will know all about it, but non-vegan folks should consider trying it out just for what it does to soups. Add a bit of this to any soup for some added salty-cheezy flavour, without too much added sodium and fat. I also love it on pasta when I don’t have any good parmesan around, but that’s not everyone’s cup of tea. In this recipe it creates a cheesy flavour without adding a lot of cheese. This soup is as cheesy as my husband’s comedy! Blah har har har!

All that being said if you don’t have nutritional yeast, just throw in more cheese, the soup will still be delicious because this is a classic and you can make it any way you want.

Here we go!


Cheesy Broccoli Quinoa Soup

2 T whatever oil

1 Onion chopped

2-4 cloves Garlic, loosely minced (optional)

3/4 cup Quinoa

2 T Nutritional Yeast  (optional)

1 tsp Paprika (if you like that sort of thing)

Water + bullion cube

Salt+pepper to taste

Cheddar or other cheese for topping. (Parmesan and Jarlsberg are both good here.)


1- Put a big pot on and heat up the oil. Sizzle up the Onions for five minutes on Med to med-high heat until they’re floppy and browned. Add the minced garlic and fry for two more minutes.

2- Add the broccoli, Quinoa, Nutritional yeast and Paprika if using, fill your pot with water and add a bullion cube. (Quinoa does best if you put it in a fine-mesh strainer and rinse it with hot water from the tap before you cook it. This goes for any time you make Quinoa.) Bring soup to a boil and then lower to a simmer. Simmer for about 25 minutes, until you start to see the little arms poking out of the Quinoa.

3- Grate a bunch of cheese and add half of it to the soup before serving. Put the other half on the table to sprinkle on as desired.

Floppy and browned, that made sense right?

Ingredient notes:

-The amounts of all these ingredients can and should be adjusted based on what you have in the fridge and your own taste, this is soup, not pound cake.

-Replace nutritional yeast with more cheese.

-To make this recipe vegan, replace cheese with more Nutritional Yeast, see if I care.
