I was in the mood for a cookie. Last week I tried making home-made granola bars for the first time. I was struck by how similar the method was to making cookies, and how the finished product tasted like cookies. So last night when I was craving a sweet treat, I made granola bars…are basically cookies. Just so nobody thinks that they’re getting away with something, I will be annoying about how this is not a healthy snack.
Preheat oven to 350 degrees
Mix about 1/2 cup Butter (softened)
with 3/4 cup brown sugar
and 1/4 cup honey (or agave nectar/ maple syrup/more brown sugar, whatevs)
I don’t like to break my hand-mixer on these things so I just used a wooden spoon and elbow grease. Of course if your butter is not room-temp, you might want to use a mixer.
Mix in 1/2 teaspoon vanilla
and 1 egg.
In another large bowl mix 1 cup flour with
1teaspoon baking powder, and
1/2 a teaspoon salt, plus maybe
1/2 a teaspoon cinnamon.
Add flour to the butter mix and stir till combined.
In the same bowl where you mixed the flour, mix
11/2 cup instant oats, and about
3/4 cup rice crispies style cerial, and
3/4 cup shredded coconut
1/2 cup chocolate chips
1/2 cup chopped peanuts, or whatever nuts
And add that to the rest of it. Mix with your elbows, this will be a stiff dough.
Press into a buttered casserole dish
Bake for 25 minutes. Let it cool right in the dish, it will be crumbly at first. Cut into squares and eat like cookies. Because, once again, granola bars are basically cookies.
